SARASOTA, Fla. (WWSB) - One-pot South Indian Lentil & Coconut dhal

200g red lentils, rinsed

1 small onion, chopped

2 cloves crushed fresh garlic

1 tsp fresh grated ginger

3 curry leaves (if available)

1-2 green Serrano chilies, finely chopped (adjust to taste or omit

if you don’t like spice)

1 tsp Garam Masala

1 tsp salt

400ml can coconut milk

Juice of 1/2 lemon or 1 tsp tamarind paste

Cilantro to garnish

Simply put the lentils and all ingredients except the lemon / tamarind and cilantro into a medium pan. Add 400ml water and bring to boil. Turn down and simmer gently, stirring occasionally for 30 minutes or until lentils are soft and cooked through. Taste and adjust seasonings if necessary and add lemon juice or tamarind. Serve with hot basmati rice, and scatter with cilantro leaves.
