SARASOTA, Fla. (WWSB) - Gluten Free Peanut Butter Cookies
40 oz chunky peanut butter
1 C brown sugar
1 C white sugar
9 egg whites
1 C soy free chocolate
Whip egg whites to meringue stage stiff peaks
Combine all other ingredients in a large bowl and fold in egg whites
Use 1 or 2 oz scoop and portion cookies onto parchment lined cookie sheet. Bake at 325 about 15 minutes until just golden brown.
Store at room temp or fridge. These also freeze great!
