SARASOTA, Fla. (WWSB) - Pompano Fillet one each 6 oz

Blended oil 1 oz for searing

Garlic 2 clove mince

Shrimp 3 each u12

Approx. 1/2 tbsp Fresh basil, thyme, parsley and spicy pepper

Heirloom Cherry Tomato Confit

4 oz green beans

Butter 3oz at room temperature

White Wine ¼ cup

Fresh Flat Leaf Parsley Sprig one each

Lemon Cog Wheels

Salt and Pepper to taste for seasoning

  • Add the oil on sauté pan over medium heat, season and sear both sides of pompano fillet skin last, add herbs and finish on the 350-degree oven for 4 minutes and set aside
  • Heat the Garlic, Butter in a sauté pan over medium heat.
  • Add the shrimp and cook until they turn pink (Approximately 2 minutes)
  • Sautee green beans with garlic salt and pepper
  • Place pompano on a dinner place and top with shrimp. Garnish with parsley sprig and lemon wheel. Serve immediately.
