Pasta Carbonara From Rico's

SARASOTA, Fla. (WWSB) -1 pound of spaghetti pasta

Half a cup of whipping cream

Four egg yolks

Half a cup of grated Parmesan

1/4 of Locatelli cheese

1/4 lb of pancetta or thick bacon

1 whole white onion

1/8 cup of olive oil

Small amount of parsley finely chopped

4 oz sea Salt

1 oz black pepper

Pinch crushed red pepper

Sauté half of a white Spanish onion till translucent and one pan sauté pancetta until golden brown.

Combined the two ingredients and add whipping cream once whipping cream comes to a boil add Parmesan cheese mix together add salt pepper crushed red pepper once that sauce is complete reduce heat add cooked pasta to your liking with tongs not drained straight into sauce.... Stir the pasta into the sauce until it thickens at that point add the egg yolks and Parmesan together continue twirling it together then plate your pasta and garnish it with some fresh Parlett parsley and some shade Locatelli cheese on top.
