Bacon Wrapped Jalapeno Chicken Thighs, with a stout BBQ sauce

SARASOTA (WWSB) -Here’s what you’ll need for these Bacon Wrapped Jalapeno Chicken Thighs!

8 Boneless Skinless Chicken Thighs 4 Jalapeno Peppers 4 String Cheese 8 Strips of Bacon

Lay out chicken thighs on a large cutting board, pound them out, so they are even

Set one filled popper inside of each chicken thigh and fold them closed.

Wrap each chicken with about 3 slices of bacon. Secure the bacon ends with toothpicks, if necessary. Season the stuffed chicken on all sides and place in oven.

Here’s what you’ll need for the BBQ sauce

8oz. of your favorite stout or beer

2 cups ketchup

2/3 cup light brown sugar

1/4 cup molasses

2/3 cup red wine vinegar

2 teaspoons Chipotle with adobo

1/2 teaspoon smoked paprika or regular paprika

1/2 teaspoon salt

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon cayenne pepper

1/4 teaspoon freshly ground black pepper

1/8 teaspoon chili powder

1/8 teaspoon mustard

1/8 teaspoon ground cinnamon

Add all ingredients into a blender until smooth. Place in a sauce pan.

Cook over medium heat, stirring frequently, until mixture comes to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.

Remove from heat and allow to cool. The sauce will thicken as it cools.

Store in an air tight container or jar in the fridge for up to 3 weeks.
