SARASOTA (WWSB) - Tsunami Poké

Sauce Ingredients:

· ½ Cup rice vinegar

· 3 Tbs soy sauce

· 2 Tbs mirin rice wine

· Juice of two limes

· ½ tsp sugar

Poké Ingredients

· 4 Cups sushi rice (or) cooked yakisoba noodles

· 1 Cup sushi grade tuna (diced)

· 1 Cup sushi grade salmon (diced)

· 1 Cup grilled chicken (diced)

· 1 Cup grilled chicken (diced)

· 1 cucumber (diced)

· 2 avocado (diced)

· 1 Cup seaweed salad

· ¼ Cup scallions

· ¼ Cup sushi nori (sliced

· 1 Cup shelled edamame

· 1 mango (diced)

· 1 Cup cherry tomato (quartered)

· 1 carrot (julienned)

Directions:

1. In a medium sized bowl, whisk together sauce ingredients and set aside to chill.

2. In a serving dish, select preferred starch and place in the bottom of dish.

3. Starting with vegetables select preferred ingredients and layer appropriately

4. Re-whisk chilled sauce, drizzle over bowl and enjoy!
