SARASOTA (WWSB) - Kentucky Hot Brown
Turkey breast 6-7 oz per serving
Thick sliced bread 1-2 slices depending on size
12 oz white American cubed
5 oz sharp cheddar
3 oz milk
3 oz heavy cream
2 oz butter
2 slices bacon
Thickly sliced turkey breast (we beer braise ours, because… Why not?)
Allow to rest so it carves easier
Start your sauce
Add butter to doublebroiler then both cheeses, cream and milk. Wisk until smooth. Add garlic
powder and black pepper to taste.
Grill the tomato slices.
Toast the bread slices with butter.
Assemble your open faced hot brown with the bread first, stack your turkey slices along with the
grilled tomatoes, followed by the mornay sauce. Finish with bacon. Garnish with paprika and
