SARASOTA (WWSB) - Seared Seabass

· Ingredients

o 2 6oz seabass

o Salt and pepper

o 2oz olive oil

· Instructions

o Heat saute pan on high

o Add olive oil

o Season seabass with S&P

o Sear on high for 2-3 min

o Turn off

o Finish in 350 oven 6-8min until tender

Tri Colored Quinoa

· Ingredients

o Half lemons zest

o 2oz olive oil

o Salt and pepper

o Tri colored quinoa, follow instructions on package

· Instructions

o When quinoa is done add zest from lemon

o Add olive oil

o Add salt and pepper to taste

Roasted Garlic Smoked Tomato Cream Sauce

· Ingredients

o 1lb smoked tomato finely chopped

o 2c heavy cream

o 2oz fresh chopped basil

o .5c white wine

o 4 cloves roasted garlic

o 2 shallots finely diced

o 1oz olive oil

· Instructions

o Heat small sauce pot over medium heat

o Add shallots

o Cook for 1-2 min

o Add roasted garlic, white wine and pinch of salt pepper

o Reduce in half over medium heat for 2-3 min

o Add basil and salt and pepper to taste

Blackened white asparagus

· Ingredients

o 10 pieces white asparagus

o 1oz blackening spice

o 1oz olive oil

· Instructions

o Peal white asparagus and trim ends

o Toss in olive oil and spice

o Broil in 500 degree oven 3-4 min until al dente

Roasted sunburst squash

· Ingredients

o 6 sunburst squash

o 1oz olive oil

o Salt and pepper

· Instructions

o Cut squash in half

o Toss in olive oil and salt and pepper

o Broil at 500 degrees 4-6 min until tender

Beet Coulis

· Ingredients

o 3 medium sized cooked beats (pealed)

o .5-1c veg broth

o 1 tbsp lemon juice

o Salt and pepper

· Instructions

o In blender start with .5c veg broth

o Add beets and lemon juice

o Blend until smooth and creamy

o Add salt and pepper and more stock if neccesary
