INGREDIENTS

For the Spring Rolls

6 Rice Spring Paper Rolls

2 Carrots, thinly sliced

1 Red Bell Pepper, thinly sliced

1 Yellow Bell Pepper, thinly sliced

1/4 red cabbage, chopped

1 ripe avocado, sliced

1 bunch fresh cilantro

1 bunch fresh mint

For the Ginger Peanut Sauce

1/2c Peanut Butter

1 1/2 Tbsp Soy Sauce

1 Tbsp Honey

2 Tbsp Lime Juice

1/2 tsp Chili Paste

1 tsp fresh grated ginger

For the Spring Rolls

1. The key to a quick assembly is to PREP. Spring rolls are all about the fillings, so make sure to have all the ingredients ready to go. Don't be afraid to get creative if you have other ingredients in your kitchen you need to use up, go ahead and add them in!

2. Start with the rice paper. To get the rice paper flexible for wrapping the spring rolls, dip in warm water for 3-5 seconds until the paper becomes fully moistened with water. Then, lay the paper on a clean flat work surface.

3. In the center of the rice paper near the bottom, lay out each ingredient you want included (red bell peppers, carrots, yellow bell peppers, mint, cilantro, cabbage, avocado).

4. Fold the bottom of the rice paper over the end of the fillings, then fold the uncovered sides inward, then tightly roll the paper all the way over. The idea is to get as tightly wrapped as possible (the first one is never pretty!). Then repeat with the remaining ingredients.

For the Ginger Peanut Sauce

1. In a small bowl, combine the peanut butter, soy sauce, honey, lime juice, chili pasted, and fresh grated ginger.

2. Stir until smooth. *Tip: You can soften the peanut butter by microwaving for 10-15 seconds, if needed.
