SARASOTA (WWSB) - Roasted Leg of Lamb with Mint Sauce

1 Leg of Lamb Boneless about 7lb

¼ Cup Chopped Fresh Rosemary

8-10 Garlic Cloves (optional)

3 Tbsp. Dried Oregano

3 Tbsp. Dried Granulated Garlic

1 Tbsp. Salt

1 Teaspoon Black Pepper

Fresh Mint Sauce (Optional)

1 Cup of mint leaves tightly packed

1 Tblsp Fine chopped Onion

1 Teaspoon chopped Garlic

1 Tblsp Mascarpone Cheese.

¼ Cup Of Olive Oil or more if


Juice of 1 Lemon

Salt & Pepper

Bring Lamb to room temperature, mix all the herbs together and rub on the lamb. Place lamb on a a roasting pan and place in the oven at 425 degrees for 15 minutes then lower temperature to 300 degrees and roast for an additional 20 minutes or until preferred doneness. Cooking time will vary based on size of the leg of Lamb.

For the Mint Sauce sauce:

Place all ingredients but the olive oil in a food processor and chop until uniform and becomes a sauce. Drizzle the olive oil until a smooth paste has formed. Serve the 1-2 Table spoon of the sauce with the roasted leg of lamb.
