Cedar Plank Peach Salmon
Serves 1 Person

6 oz Salmon
1 Cedar Plank
1 tsp fresh cilantro
3 oz diced peaches in syrup
1 oz diced tomatoes
1 oz diced red onion
1 oz water
1 oz lemon juice
1 TBSP ancho chili powder
Directions
In a baking dish, place the cedar plank with the salmon on top, then sprinkle ½ tablespoon of the ancho chili powder and add the lemon juice and water. Place in a 425 degree oven for approximately 10-15 minutes or until the fish is cooked to medium .
While the fish is cooking, work on the sauce! Start with adding the peaches and the remaining ancho chili powder in a mixing bowl. Add the tomatoes, onion and fresh cilantro and refrigerate.
Once the salmon is done to your likening place it on a serving dish, plank and all. Top with the peach salsa and serve .
