Black-eyed Pea Collard Green Smoked Sausage Soup
Serves 6
Ingredients
1LB Smoked Pork Sausage
15 oz can Black Eyed Peas Drained
3 Stalks Celery Diced
1.5 cup Diced White Onion
1.5 Cup Sliced Carrot
1.5 cup Frozen Chopped Collard Greens
1 cup Frozen corn
4 cups Chicken Broth
1 teaspoon Thyme
1 teaspoon Basil
½ teaspoon oregano
Red Pepper flakes to taste
Salt and Pepper to taste.
1can 28 oz once Diced tomato
I tablespoon olive oil
Slice Sausage ½ inch
2 cloves chopped garlic
In Dutch oven add oil ,onion, celery to a sweat. Add sausage sauté a few minutes. Add Carrots, Chicken Broth, all spices and Collard Greens. Let it come to a boil then lower to a simmer for 20 mins. Add Black eyed Peas. Cook for 10 more minutes.
