Grilled Sirloin over Sunchoke Hash

  • ½ onion chopped
  • 2 Tablespoons olive oil
  • 2 cups cut and peeled butternut squash
  • 1 package of fresh sunchokes, washed and sliced
  • 1 Teaspoon Moroccan seasoning
  • Kosher salt
  • Fresh ground Black pepper
  • 1 cup sliced mushrooms
  • ½ cup vegetable broth if needed
  • 1 cup baby kale and or spinach
  • 1 teaspoon coconut Thai seasoning
  • 2-4 eggs


  • Season steak with garlic salt and fresh ground black pepper
  • Grill to medium rare and rest 20 minutes before slicing
  • Fry 2-4 eggs
  • Heat large skittle with oil and onions until translucent
  • Add butternut squash and sliced sunchokes and sauté. You may add another tablespoon of oil if needed
  • Sauté until slightly tender
  • Arrange hash on center of plate
  • Top with sliced sirloin or grilled salmon and fried eggs
