Butternut Squash Pita

Serves 1-2


1-  Butternut Squash

1- Large Diced Onion

1/2 Cup of  Fresh Mint

2 Cup of Flour

1/2 Cup Water

Salt and Pepper to Taste

3/4 Cup of Olive Oil


Clean and slice a butter nut squash into 1/4-1/2"-thick slices. In a small bowl, combine the flour and the water. Place butternut squash, onion, fresh mint, and salt and pepper into a bowl and add in the flour mixture and combine until thoroughly mixed together. Place the mixture into a strainer and let the extra liquid drain out for 3-4 hours. 

Pour 3/4 cup of olive oil into a medium sized fry pan. On medium heat place the butter nut mixture into the pan and flatten the mixture to take the shape of the pan. Fry the mixture (flipping it) until each side is a golden brown. Serve as a side dish.
