Stuffed Zucchini by Apollonia Grill
- 6 Medium Zucchini (Green Squash)
- 1 Cup Marinara sauce
- 1 Cup Diced Tomato
- 1 Cup Diced Onion
- 1 Cup Button Mushroom quartered
- 2 Tablespoon Garlic minced
- 2 Table spoon fresh basil thinly sliced
- ½ Chopped Fresh Parsley
- ½ Cup Bread Crumbs
- 1 Cup Feta Cubes
- Olive Oil
- ½ Cup White Wine
- Dry Oregano
- Salt and Pepper
Rinse zucchini and slice in half length ways. With a small spoon or melon baller remove seeds and some of the zucchini flesh to create a groove to place filling.
Dice the pieces removed from zucchini. In a heated pan sautee all of the vegetables for about 2-3 minutes then add then add the ground beef. Add the Oregano and season with salt and pepper. Cook and break down the beef for about 3-4 minutes.Add the marinara and basil then cook for another 3-4 minutes. Remove from the pan and transfer into a bowl.
Drizzle the zucchini “boats” with Olive oil and season with salt. Fill the zucchini with the stuffing and sprinkle with bread crumbs. Place the feta cubes (3-4 per zucchini) and drizzle lightly with olive oil. Bake at 375 degrees for about 15-20 minutes or until the top is browning and zucchini is tender. Garnish with chopped parsley.
Serve over Couscous.
