Stuffed Shrimp

1 lb. bay scallops

1 lb. baby butter shrimp

1 lb. black fin crab meat

1 lb. ritz cracker crumb

8 oz. butter, melted

3 oz. lime juice, fresh

2 cups mayonnaise

½ cup Dijon mustard

2 tbsp. paprika

1 bunch cilantro, chopped

To taste, sea salt

Lightly steam shrimp and scallops. Leave undercooked. Chill for 1 hour.

Mix chilled, steamed seafood with the remainder ingredients in large mixing bowl. Form into 4 oz. scoops on baking sheet. Bake for 20 minutes, or until golden brown, in preheated oven at 325 degrees. Serve over jumbo sautéed shrimp or prawns.
