Spiral beet salad

I am so happy to see The Fresh Market now carries spiralizer veggies.

While I love working my own Spiral cutter, beet juice stains so getting it prepared is worth saving the stains on your clothes.

INGREDIENTS: 

2 containers spiral cut fresh beets 

2 Tablespoons EVOO

1 Tablespoon white Balsamic vinegar

1 small tube goat cheese, cut into pieces

1 cup shelled pistachio nuts

1 Tablespoon chopped flat leaf parsley

PREPARE: 

Whisk oil into vinegar in a medium size bowl

Toss in other ingredients

Season with Kosher salt and fresh ground black pepper

Let rest 15 minutes before serving.
