SHRIMP OREGANATO

Chef Joe DiMaggio, Cafe BarBosso

10 JUMBO SHRIMP

.05LB BREAD CRUMBS

1 Tablespoon minced fresh garlic

1 tablespoons of each, Italian parsley, fresh basil, oregano

.05LB fresh grated parmesan cheese

Salt and pepper to taste

1/4 cup olive oil

1/4 cup Fresh lemon juice

1/4 cup White wine

3 tablespoons Butter

Fresh lemons

Mix breadcrumbs with all ingredients except lemon, wine and butter. Open each shrimp up and top with breadcrumb mixture. Place into pan with liquid and bake at 400 degrees Celsius for 10 minutes, serve with Fresh lemon wedges.
