Seared Grouper, Lentils & Cauliflower

Ingredients: Serves 4

2 lb Cauliflower Florets

3 oz Curry powder

3 oz Olive Oil

Salt & Pepper

2 oz Vegetable Oil

4 oz Bacon Diced

2 oz Carrot Diced

2 oz Celery Diced

2 oz Onion Diced

2 Clove Garlic Peeled

10 oz Black Lentil Washed (or other lentil type)

8 oz Chicken Stock

3 oz Butter

2 oz Vegetable Oil

4 6oz portions Black Grouper, Skin Off

Salt & Pepper

4 oz Butter unsalted

Lemon wedged

Thyme Sprig

3 oz chopped parsley

Directions:

Preheat an oven to 350ºF. Coat the cauliflower in curry, olive oil, salt and pepper. Roast for 12 minutes & reserve.

While cauliflower is cooking, heat oil in a medium pot and add the bacon and all the vegetables to sweat about 5 minutes.

Add lentils to the pot. Cook 2 minutes

Add chicken stock, bring to simmer and cook 10 minutes. Finish with butter

Meanwhile, Heat oil in a non stick sauté pan to medium heat. Season grouper and cook on one side for 2-3 minutes. Flip and cook for 2 minutes then add the butter and thyme and cook for an additional minute. Remove from heat and finish with a squeeze of lemon. Use pan juices as sauce.
