Whole Wheat Linguini with Fresh Tomato Sauce

Serves 4-6


• 1 lb. whole wheat linguini

• 1 ea. garlic clove

• 4 ea. anchovies

• 3 lb. fresh tomatoes

• 3 ea. Hot Banana peppers, thinly sliced

• 2 Tbsp. Lemon Juice

• 2 tsp. sea salt

• ½ tsp. black pepper, fresh ground

• ½ chopped fresh herbs (basil, oregano, dill, parsley, mint) any combination

• Shaved parmesan (garnish)

• Extra Virgin olive oil (garnish)


1. Mince garlic with salt, pepper and anchovy, put in serving bowl

2. Chop small 2/3 of the tomatoes and add to bowl along with banana peppers

3. Cut remaining tomatoes in ½ and grate with large holes of box grater into same bowl, discarding skin

4. Add lemon juice and let stand 10 minutes at room temp

5. Meanwhile cook the linguini in plenty of heavily salted water for about 10 minutes, or till pleasantly al dente

6. Drain pasta and while hot add to tomato mixture and toss

7. Allow to stand 5 minutes and serve family style or in individual pasta bowls

8. Sprinkle with cheese, herbs and olive oil, serve
