Basic quiche base:

9in round pie crust (homemade or store bought)

6 large eggs, beaten

1/2 cup whole milk

1 cup half and half

Salt and pepper

A pinch of nutmeg

Beat eggs, add milk, half and half, nutmeg, and salt and pepper. Whisk all together. Layer quiche filling of your choice in pie crust. Start with cheese, then add additional ingredients. Pour egg mixture over filling. Bake in a preheated 375 degree oven for 35 to 45 minutes.

Yields 8 Servings

Quiche Lorraine:

Basic Quiche Base

1/2 lb bacon cooked and crumbled

2 cups chopped fresh baby spinach

1 1/2 cups Shredded Swiss Cheese

Sun Dried Tomato and Basil Goat Cheese Quiche:

3/4 cup diced sun-dried tomato, in oil, drained

1/2 cup crumbled goat cheese

4 - 6 large basil leaves chopped

Mushroom and Kale Quiche:

1 cup of baby portabella mushrooms chopped and sauted with one clove of minced garlic

1 large bunch of Kale, thick stalks discarded, leaves roughly chopped
