Summer Caprese

Summer Caprese for two:

  • One slice of 1/2 inch thick watermelon
  • Goat cheese
  • Arugula
  • Two large shrimp
  • Basil
  • Thin slice of Parma prosciutto
  • Good balsamic vinegar
  • Extra virgin olive oil
  • Fresh ground pepper
  • Salt

With round cookie cuter, cut the watermelon in three discs, and the goat cheese log in two discs.  Make a tower with them and topped with slice of Parma prosciutto and basil.

On the side, sauté the shrimp in skillet with olive oil add salt and pepper.

Surround the tower with arugula the shrimp and a drop of balsamic vinegar and olive oil. Buon Appetito.
