12/13/12 - Sizzling Spanish Shrimp Tapas

1Pound Shrimp (Peeled/Deveined/Dried)

8Tbsp. Olive Oil

Salt/Pepper

Crushed Red Pepper Flakes

Sweet Smoked Paprika

Parsley/Chives

5 Cloves Garlic Sliced

1 Tbsp. Butter

¼ Cup Dry Sherry

Lemon

Sprinkle salt (to taste) on shrimp and let rest for a few minutes. Add oil to sauté pan and let it get hot. Add garlic and cook until it just begins to turn golden~add shrimp and cook until just pink. Add sherry and let sherry evaporate (this concentrates the flavor). When the shrimp are just cooked through, add the butter and swirl the pan to incorporate the butter. Plate up shrimp and garnish with the fresh parsley/chives and a dash of sweet smoked paprika. Squeeze a little lemon on the shrimp and serve with toasted baguette slices (for dipping in the sauce).
