12/3/12 - Potatoes with Huancaina Sauce

Sauce:

- 1 cup Onions Chopped

- 5 oz Garlic chopped

- 2 oz unsalted crackers

- 1 oz salt

- 5 cups blended oil

- 12 oz queso fresco

- 2 oz Aji Amarillo ( Latin Market)

- 3 cans evaporated milk

- 6 each boiled potatoes

Directions: Saute onions, garlic,aji Amarillo until translucent, let it coll. Blend all ingredients, add oil slowly. After emulsify set it aside and pour on top of boiled potatoes
