Mediterranean Spiced Shrimp with Orzo

Serves 4

  • 1 pound Peeled and deveined Shrimp
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon minced fresh ginger
  • 2 tablespoons minced onion
  • 2 tablespoons lemon juice
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons hot smoked paprika
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 2 Cups cooked Orzo
  • 1 tablespoon Chopped Parsley
  • 1 teaspoon chopped mint

Combine spices, lemon juice, ginger, onion and olive oil to make a marinade. Add shrimp and marinate for 4-8 hours. In a pot, add parsley and mint to cooked orzo and drizzle with olive oil.

Heat a sauté pan on medium high heat. Cook shrimp until just finished and pour over orzo. Serve hot with Crispy Bread!
