5/15/13 - Mediterranean Pasta Salad

1 box torcetti pasta

1/3 cup canola oil

1/4 cup red wine vinegar

3 Tbsp sugar

1 tsp Italian seasoning

1 tsp dry mustard

4 cups baby spinach

2 cups grape tomatoes

1 cup bruschetta mix

2 cups diced salami

1 cup kalamata olives

1 cup garbanzo beans

1 cup feta cheese

Salt and pepper

Cook pasta and allow to cool slightly. In a blender combine oil, red wine vinegar, Italian seasoning, and dry mustard, and blend to form a vinaigrette. In a large bowl mix together cooked pasta, spinach, tomatoes, bruschetta mix, garbanzo beans, olives, salami, feta cheese, and 3/4 cup of the vinaigrette. Season with salt and pepper. Allow pasta salad to marinate for at least two hours before serving.
