Jack Dusty is the perfect spot to let your troubles blow away in the breeze while you causally relax on the soft couches by the outdoor fire or inside with a view of the bay.

Jack Dusty is located at 1111 Ritz-Carlton Drive in Sarasota.

Jack Dusty’s Marinated Olives


  • Garlic 4cloves
  • Thyme Sprigs 15each
  • Orange Peels 1whole
  • Red Bell Pepper 1whole
  • Crushed Black Peppercorn 10each
  • Toasted Caraway Seed 10each
  • Chili Flakes 1tsp
  • Olive Oil 0.25c
  • Pitted Castelvetrano Olives 1c

Coat garlic cloves with a light amount of Olive Oil and roast in 350F oven until golden brown approximately 7 minutes. Split Bell Pepper in half, remove seeds and coat with Olive Oil. Roast Pepper in 350F oven until fully cooked.

Julienne Orange Peels and Roasted Peppers.

Combine all ingredients.

Crab & Fried Green Tomatoes

Fried Green Tomatoes

  • Green Tomatoes 5each sliced 1/8 inch thick
  • All Purpose Flour 1C
  • Cornmeal 0.5C
  • Beaten Eggs 1C
  • Panko Bread Crumbs 1C
  • Blackening Spice 1/8 C

Blend Panko Bread Crumbs and Cornmeal in robot coupe with Blackening Spice

Coat sliced Tomatoes using a standard breading procedure; flour, eggs, breading mixture

Charred Tomato Vinaigrette

  • Roma Tomatoes 3each cut in halves
  • Garlic 1clove chopped
  • Shallot 2each chopped
  • Sherry Vinegar 0.25C
  • Salad Oil 1.5C

Toss Tomatoes in Oil and season, char Tomatoes well on grill. Sauté Shallots and Garlic until caramelized

Blend Tomatoes, Shallots, and Garlic in blender with Sherry Vinegar Incorporate Oil to create vinaigrette

Pico de Gallo

  • Roma Tomatoes 3each small diced
  • Red Onion 0.5 small diced
  • Cilantro 1bunch chopped
  • Jalapeno 1each chopped
  • 1lime juiced

Combine all ingredients and season with salt & pepper

Cajun Mayo

  • Mayonnaise 2C
  • Whole Grain Mustard 4oz
  • Paprika 2tsp
  • Blackening Spice 2oz
  • Cayenne
  • Lemon Juice 2oz
