Chef Judi is visiting Veg - A Vegetarian & Seafood Eatery in Gulf Gate in this week's Lunch with Chef Judi.

Are you looking for the freshest, the healthiest, AND the tastiest lunch and dinner?

Are you gluten intolerant? Do you prefer flavorful vegan items, or do you love fresh seafood like caramelized scallops?

Veg is THE healthy choice for fresh, delicious meals located on Gulf Gate Drive.  You don't have to be a hippie to love this amazing food.  Best vegetarian burger in town and oh those homemade soups, spinach quiche with cashew "cheese", and sun dried tomatoes... OMG.

Veg is located at 2164 Gulf Gate Drive in Sarasota.

Cilantro-Lime Lettuce Wraps

Lettuce Wraps:

  • 6 large romaine lettuce leaves
  • 1 cup snap peas sliced lengthwise
  • 1 cup cherry tomatoes sliced lengthwise
  • 1 cup shoestring carrots
  • 2 avocadoes chopped into 1/4" squares
  • 1 cup shredded purple cabbage
  • 1/3 cup key lime juice
  • 1/2 cup chopped fresh cilantro

Mix all the ingredients, except the romaine, in a mixing bowl. Spoon approximately 1/2 cup of the mixture into the lettuce leaf. Drizzle with the ginger dressing listed below.

Ginger Dressing:

  • 3 cloves garlic, minced
  • 2 T. minced fresh ginger
  • 3/4 cup olive oil
  • 1/3 cup rice vinegar
  • 1/2 cup soy sauce
  • 2 T. honey
  • 1/4 cup water

Place all ingredients in a pint glass jar. Shake contents and microwave for 1 minute to dissolve honey. Refrigerate and serve.
