5/8/13 - Lemon waffles with blueberry sauce

For Blueberry sauce -

2 cups fresh blueberries

1Tbsp lemon zest

3/4 cup water

1 cinnamon stick

4Tbsp sugar

2Tbsp butter

For Lemon Waffles-

2 cups whole milk

2Tbsp lemon juice

2 cups all-purpose flour

1/2tsp salt

1 1/2Tbsp sugar

1 1/2tsp baking soda

2 eggs

4 Tbsp butter, melted

1/2tsp vanilla

3Tbsp lemon zest

2Tbsp powdered sugar

In a small sauce pot bring blueberries, water,sugar, lemon zest, and cinnamnon to a simmer. Cook for 10 minutes or until the sauce begins to thicken. Remove from heat and whisk in butter, set aside to cool slightly.Mix together whole milk and lemon juice. Set aside and allow to stand for five minutes. Mix together whole milk and lemon juice. Set aside and allow to stand for five minutes.In the meantime, whisk together flour, salt, sugar, lemon zest, and baking soda. Add eggs and vanilla into milk mixture and beat until well-combined. Pour milk mixture into dry mixture and stir together just until combined. Lightly spray top and bottom of waffle iron and preheat iron. Pour batter into waffle iron and cook to your iron's instructions. Top waffles with blueberry sauce and powdered sugar
