1-whole 3-5 pound Hen
2 tsp. Salt & Pepper Blend
1 tsp Fresh Oregano (chopped)
1 tsp Fresh Basil (chopped)
1 tsp Fresh Thyme (chopped)
2 Tbl clarified butter
Split Chicken in half & remove the backbone. Rub with melted butter on both sides & sprinkle w/ herbs & seasoning. Place chicken on a sheet pan & roast in a 400* oven for 45 minutes & remove.
Country Gravy Recipe:
2 Cups of rich chicken stock
Chicken Base to taste – OR Salt & Pepper
1 pinch of black pepper
1 small pinch of granulated garlic
Bring to a slow simmer, just to the boiling point and reduce by 1/3 & thicken with a
Roux (clarified butter & flour).
2 Cups Bisquick Biscuit baking mix
2/3 Cups Milk.
Mix Bisquick & milk until soft dough forms.
Drop by spoonful into a 2inch pan with 2 cups of hot chicken stock, cover with aluminum foil. Poke holes in the foil with a fork. Place in a 375* oven for 8–10 minutes, Remove
From oven and place on plate, top with chicken and gravy.
