Gluten-free Penne with Broccoli Rabe & Sausage
Ingredients: (For two servings)
- 8 oz. gluten free pasta
- 1 oz. extra virgin olive oil
- 2 tsp fresh garlic, sliced thin
- 2 tbsp. diced yellow onion
- 4 oz. Italian Sausage, cut on the bias
- 1 oz. sun dried tomatoes
- 3 oz. broccoli rabe
- 2 oz. veal stock
- Pinch of salt and pepper
Thoroughly wash the broccoli rabe and remove stems. Blanch in a large pot of boiling water for about one minute, set aside
Bring a large pot of water to a rolling boil, add a pinch of salt. Add pasta to boiling water and cook until al dente.
While the pasta is cooking, heat a sauté pan over high heat, add olive oil.
Add garlic, onion, and sausage, sauté and toss for about two minutes
Note: We use a sweet sausage, can substitute hot
Add sun dried tomatoes and broccoli rabe, sauté for 2 minutes, then add veal stock to deglaze pan.
Remove pasta from boiling water and drain. Add to sauté pan and toss until mixed thoroughly.
Serve on round platter and garnish with fresh parsley
