1/22/13 - Fried Rice

Step 1:

• 2 C leftover cooked white rice, preferable long grain

• 1 egg

• ½ t sesame oil

Method:

Break the rice up into individual grains. Crack the egg into the rice and toss until the rice is coated. Heat the sesame oil until smoking hot, then quickly stir fry the rice until it “soufflés”. Transfer to a plate and hold

Step 2:

• 1 C small diced vegetables and or raw , small cut meat or seafood

• 1 t minced garlic

• 1 t minced ginger

• ½ T sesame oil

Method:

In the same Saute pan, Heat the sesame oil until smoking hot. add the garlic and ginger and quickly sauté for 10 seconds. Immediately add the vegetables and/or meat/seafood. Stir fry for 2 minutes, or until everything is partially cooked. Transfer the stir fried ingredients to a separate plate.

Step 3:

• 2 oz teriyaki sauce (store bought is ok)

• 2 T sliced scallion

• 2 T fresh cilantro

Method:

Heat the large sauté pan till smoking hot once again, then immediately add the cooked vegetables/meat/seafood. Stir fry for 1 minute, then add the rice and stir fry for 2 minutes. Finish with teriyaki sauce, scallion and cilantro. Stir, taste for seasoning, plate and serve
