1 pound Earth mix pasta from Peperonata pasta (farmers market)

I love shopping at Yoder’s produce market and I love fresh pasta from out local famed pasta company Peperonata pasta

Together we created a simple fresh dish to serve after sunset to your friends - best part, the leftovers make a wonderful cold pasta salad

1 eggplant diced

1 large zucchini diced

2 small summer squash diced

2 Anaheim peppers diced

1 cup red grape tomatoes

1 cup yellow grape tomatoes

1 1/2 cup marinara sauce

1/2 cup fresh basil

1/2 cup goat cheese

1 red onion diced

3Tbsp olive oil

1tsp red pepper flakes

Salt and pepper

Cook pasta as directed on package. In a large sauté pan heat up olive oil over medium high heat. Add red pepper, onions , and Anaheim peppers, and sauté for five minutes. Add the eggplant, summer squash, and zucchini. Sautee till all ingredients are tender , and add the marinara sauce. Reduce heat to medium , add pasta and toss lightly. Garnish with basil and goat cheese.
