  • Extra Virgin Olive Oil
  • 1 8oz piece of Grouper
  • 1 Egg
  • ½ cup of Slivered Toasted Almonds
  • 1 oz Dry Vermouth
  • 4 oz Amaretto Di Sorrono
  • Dash of Cream
  • Pat of Butter
  • Sol’s Seasoning Mix: Salt, Pepper, Garlic Powder, Onion Powder
  • Fresh Chive Sprigs for Garnish
  • Diced Sweet Potato Hash:
  • 1 Cup of Diced Sweet Potato
  • ½ Cup of Diced Red Onion
  • ½ Cup of Diced Red Pepper
  • Fresh Cilantro
  • Sol’s Seasoning Mix: Salt, Pepper, Garlic Powder, Onion Powder
  • Liberal Dash of Cinnamon
  • Pat of Butter

Grouper Almondine Method:

1. Season fish, coat with a light egg wash and encrust with almonds

2. Sear fish in a hot pan with extra virgin olive oil until golden brown on one side, flip fish over

3. Add Amaretto and Dry Vermouth and allow to cook off

4. Add a touch of heavy cream and a pat of salted butter and reduce

5. Garnish with fresh green chive sprigs and serve over Diced Sweet Potato Hash

Diced Sweet Potato Hash Method:

1. Spread sweet potatoes in a hot pan coated with extra virgin olive oil and cook for 5 minutes

2. Add the rest of the ingredients and cook until all flavors are combined
