1 cup cilantro
¼ cup pineapple juice
¼ cup soy sauce
1 ½ pounds skirt steak
1/2 tsp brown sugar (or white sugar)
2 TBSp. mayonnaise
1 tsp prepared wasabi paste
9-10 green leaf lettuce leaves
3 large carrots, cut into thin julienne strips
1 seedless cucumber, cut into thin julienne strips
6 scallions (green parts only), cut into thin julienne strips (or substitute thin chives)
Toasted or wasabi-flavored sesame seeds for garnish
Blend together pineapple juice, cilantro, soy sauce, brown sugar, and Worcestershire sauce.
Marinate steak for at least two hours. Place the steak in the broiler for about three minutes on each side. Let rest for ten minutes before slicing very thin.
Mix together the mayonnaise and wasabi paste. Cut the lettuce leaves in half and trim away the tough center vein. Spread each leaf with a small amount of wasabi mayo. Place a few pieces of each type of vegetable in the center of the lettuce leaf and top with a few steak slices . Sprinkle with sesame seeds and roll up. Place seam-side down on a platter or serving dish. Serve with Chinese dumplings or Chinese salad
