Chicken Madeira

• 6 oz Chicken pounded out scallopine style

• 1 tsp salt

• ¼ cup flour

• 1 oz vegetable oil

• 3 oz Madeira Wine (good quality)

• 3 oz chicken stock

• 1 TB butter

• ½ cup crimini mushrooms (optional)


• Pound chicken breast thin, salt and dredge with flour

• Heat oil in skillet until just smoking. Saute chicken for 2 minutes per side.

• Add mushrooms now if using.

• Add Madeira to pan. Be cautious, it will flame.

• Add stock and reduce sauce by 1/3 then add butter

• Remove chicken to plate and pour sauce over once butter has melted into sauce.
