5/16/13 - Cellophane Noodle Salad

1 bag of cellophane noodles - cook according to directions - drain set aside(rice-noodles- high in Niacin / traces of Amino Acids)

Julienne one of each: Carrot, Red / yellow / orange bell pepper

4 each sun dried tomatoes and 4 snow peas cut into slivers (Vitamin A, E-Calcium, Lycopene)

Chop 3 Tbs. Cilantro (Vitamin K-B12)

1/4 cup Roasted Cashews (high in Calcium-B12)

1/2 cup dried Cherries (anti-inflammatory,antioxidant, Vitamin A)

Small can of Mandarin Orange sections drained (Calcium, vitamin C, A )

1/4-cup rice wine vinegar (only 4%acidity)

Sea Salt to taste (82 trace minerals)

In a large bowl toss all ingredients gently and make sure you garnish the top with a mixture of veggies, nuts and cilantro over noodles for a "nice" presentation...Bon Appetite!
