4 Boneless chicken breasts

3 tomatoes diced

6 garlic cloves minced

½ yellow onion diced

1 bottle Italian dressing (olive oil, red wine and balsamic vinegar, garlic, oregano

1 cup basil chopped

1 pound Peppernatta pasta (farmer’s market)

¼ cup parmesan cheese

¼ cup olive oil

2 balls burrata cheese diced

Salt and pepper

Marinate chicken in Italian dressing over night. Grill chicken and let rest for 20 minutes. Sautee garlic, onion, and tomatoes in olive oil until garlic and onions have cooked down, add pasta, diced cheese and basil and toss with 2Tbsp. olive oil, season with salt and pepper. Slice chicken and arrange over pasta. Garnish with basil and parmesan cheese.
