Branzino alla Mediterranean

  • One fresh Branzino (Mediterranean sea bass)
  • 1/4 c extra virgin olive oil
  • 1oz. black olive
  • 1tsp. large capers
  • 6oz. white wine
  • One clove of garlic
  • 1/2 c cherry tomato
  • Fresh parsley or sprig of basil
  • Salt and pepper to taste

Pan sear the fish with olive oil.  Add garlic, caper , black olive and cherry tomato.  Add herbs and white wine, cook slow for five minutes, and serve with pasta or vegetables.
