Rack of Lamb with Balsamic Fig Glaze from Blu Mangrove Grill

Rack of Lamb topped with a Balsamic Fig glaze

Blu Mangrove Grill

1 rack of lamb

2 tbsp honey

1/2 cup red wine

2 tbsp soy sauce

1 tbsp chopped garlic

2 cups of balsamic vinegar

2 tbsp butter

1/2 cup of dry figs

1/4 cup sugar

1 tbsp olive oil


Add red wine, honey, soy sauce, chopped garlic and salt & pepper to a medium bowl, stir all ingredients. Add the rack of lamb and let it sit at least for 3 hours marinating (overnight is highly recommended). The lamb is ready for grilling, 15 minutes for medium rare.


In a medium sauce pan, reduce the balsamic vinegar on low heat for about 20 minutes. Once reduced, add butter, dry figs and sugar. Cook for about 10 more minutes on low heat. Drizzle over lamb and serve.
