Potato (Aloo) Filling


2 cups mashed potatoes

1/2 cup frozen peas

2 tbsp canola oil

1 medium onion, chopped

3 cloves garlic, crushed

2 tsp fresh ginger, minced

2 serene chillies, minced

1 tsp turmeric

2 tsp garam masala

1/2 tsp sugar

1 tsp salt

Juice of one lemon

1/2 bunch of cilantro, chopped including stems

Filo cups for serving


Heat oil in a pan and add onions. Fry over medium heat until softened and

beginning to brown. Add ginger, garlic and Sereno - stir for a few seconds

until sizzling and add the potatoes and peas. Stir the mixture to avoid

sticking. Turn off the heat. Add the rest of the ingredients. Adjust

seasonings as required.

Fill the filo cups with aloo mixture. Serve drizzled with cilantro chutney.

Pomegranate / chopped onions make a tasty topping!
