Serves 8 people
3 golden apples
7 oz of granulated sugar
14 oz of heavy cream
cinnamon and some lemon zest
7 oz of flour
3 oz powder sugar
½ vanilla bean
5 oz of butter soft
1 oz of almond powder
pinch of salt
Prepare the pastry dough with a mixer in a mixing bowl with a paddle.
Let it rest at least an hour in the fridge.
Roll the pastry dough in a tart mold.
Peel the apple and cut it in little cubes.
Melt the butter in the pan and add the apple to have them darker, add 2 oz of sugar and caramelize the apples.
In a bowl, mix the cream, sugar, eggs, vanilla and cinnamon.
Pour and spread the apples on the pastry dough. Pour the mix on top of the apples. Add a touch of lemon zest on top.
Preheat your oven at 375.
Bake the tart 40 minutes at 350.
Can be served warm as well.
