Mussels alla Marinara

1 lb. blue tipped mussels
1 oz. minced garlic
1 oz. olive oil
1/4 cup fresh diced tomatoes
1/8 cup fresh diced onions
3 oz. marinara
1 tbsp. Italian spices (your preference)
Dash of parsley (for appearance)
In a medium skillet, heat oil, garlic, onions, and tomatoes until garlic starts to brown. Add white wine and simmer for 1 minute to burn off alcohol.
Add in mussels and marinara to the skillet and cover for 3-5 minutes or until mussels have all opened. Stirring occasionally. Once opened, remove lid, add spices, and let simmer for 2-3 minutes. Remove from heat and serve!
