Moroccan Citrus Roasted Chicken

Serves 3-5


  • Whole chicken
  • Lemons
  • Oranges
  • Rosemary
  • Chopped garlic
  • Moroccan spice
  • Paprika
  • Turmeric
  • Oregano
  • Salt
  • Olive Oil


Cut lemons and oranges into ¼” pieces. Add chicken, rosemary, chopped garlic, Moroccan spice, paprika, turmeric, oregano, salt and olive oil to a large mixing bowl with oranges and lemons. Mix thoroughly until chicken is coated in seasoning. Let the chicken marinate for at least 6 hours.

Preheat oven to 350 degrees. Roast chicken for about 40 minutes. Once ready, garnish with freshly chopped parsley.

Baked Falafel Pita

Serves 1


  • Pita bread
  • Greek tzatziki sauce
  • Baked falafel
  • Israeli skhug sauce
  • Mediterranean relish
  • Shredded red cabbage
  • Crumbled feta
  • Chopped dill


Heat a piece of pita bread on a nonstick skillet over medium heat. Place pita bread on a plate and spread Greek tzatziki sauce on the pita. Place three baked falafel on the pita. Drizzle Israeli skhug sauce over baked falafel. Add scoops of Mediterranean relish. Top with shredded red cabbage, crumbled feta and fresh dill. Drizzle on additional skhug and serve.
