Mac N Cheese | Brick's Smoked Meats 


  • 4C toasted panko
  • 1/2C Cojita cheese
  • 1/4C  sundried tomato
  • 1 tbsp Kosher salt
  • 1 tbsp granulated garlic
  • 1 tsp dry parsley
  • 1/4C diced yellow onion
  • 1C  heavy cream
  • 1C  whole milk
  • 14oz American cheese
  • 8oz  smoked gouda
  • 1/2 tsp black pepper
  • 1/2 tsp ground cayenne


  • Chop tomatoes in food processor, add rest of ingredients.  Pulse in food processor until combined.
  • Sautee onions until soft. 
  • Next, add the cream and milk while stirring, once incorporated add the cheeses and spices stirring constantly so the cheese doesnt burn. 
  • Combine cheese sauce with 1/2 lb al dente elbow or corkscrew macaroni in a large casserole dish. 
  • Cover with crumb topping and heat in the oven at 350 until cheese is bubbling and the top is golden brown.
