July 4th Cake

Vanilla Butter Cake

1.25# Butter

4 Cups Sugar

8 Eggs

6 Cups Flour

2 T. Baking Powder

1 teaspoon Salt

2 Cups Heavy Cream

2 T. Vanilla

 Directions:

  1. Cream the butter and sugar.
  2. Add eggs one at a time until incorporated.
  3. Add baking powder, salt and vanilla.
  4. Alternate adding flour and heavy cream.
  5. Divide batter in half and add blue dye to desired color.
  6. Spray and line two, 9” round pans with parchment paper.
  7. Bake at 325 degrees until done in the center.
  8. Allow to cool completely before cutting layers.

Red Velvet Cake

  • ½ Cup Butter              
  • 1 ½ Cups Sugar                       
  • 2 Eggs             
  • 2 Tablespoons Red coloring              
  • 3 Tablespoons Cocoa powder
  • 1 Tablespoon Vinegar
  • 2 teaspoons Vanilla
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 2 ½ Cups Flour
  • 1 Cup Buttermilk

Directions:

  1. Cream the butter and sugar.
  2. Add eggs.
  3. Add red color, cocoa, vinegar, vanilla, salt and baking soda.
  4. Add the flour alternately with the buttermilk.

 Cream Cheese Icing

  • 1 # Cream Cheese
  • 1 # Butter, Unsalted, room temperature
  • 2 # Powdered Sugar
  • 2 teaspoons Vanilla Extract

Directions:

  1. Cream the butter and cream cheese until there are no lumps.
  2. Add the powdered sugar slowly until incorporated.
  3. Add the vanilla extract.
  4. Beat on medium speed until light and fluffy. Use immediately.
