Ultimate Party Pasta

This is a great party pleaser for Christmas or New Year’s Eve. I was looking for a way to use the bits and pieces left over from a relish tray and ended up having a beautiful anti pasta dish for company

1 box Fusilli pasta- boiled to al dente- drained but not rinsed

1 jar roasted red peppers

Marinated mushrooms

Grilled marinated eggplant

2 Tablespoons fresh chopped basil

2 whole cloves garlic diced

Large jar artichokes- drained

1 jar sundried tomatoes with oil

½ cup sliced black olives

¼-cup chicken stock

½ cup diced Genoa salami

¼ cup plus extra virgin olive oil

1-cup fresh mozzarella mini balls

Sprig of fresh basil for garnish

In a large wok pan, sauté garlic in olive oil until warm but not browned. Add leftover relish tray items (make sure there are no pickles or beets) and chopped salami. Sauté 2-3 minutes.

Add more olive oil if needed. Add pasta and chicken stock and toss well for 1 minute. Add chopped basil and mozzarella and toss. Remove from heat and serve right away.

Garnish with a drizzle of olive oil and basil sprig
