Harry's Florida Lobster Roll

Lunch for 4-6 people

Ingredients:

2 8 oz Florida Lobster Tails (or cold water will do)

Carrot

Celery

1 small onion

1 oz Olive oil

8 oz Mayonnaise

Cilantro

2 Limes

1 oz Honey

4-6 Hot dog buns

Butter

Salt and Pepper

Directions:

Poach lobster tails in boiling seasoned water for 6-7 minutes. Place in ice bath to stop cooking, let cool. Chop carrot, celery, and onion very small and lightly sauté in the olive oil. Mix mayonnaise, cilantro, fresh lime juice and honey with salt and pepper in bowl. Butter inside of hotdog buns, toast in oven. Take tail meat out of the shell, place on cutting board and chop. Place meat in mixing bowl and add the vegetable mixture and dressing till you have reached your desired consistency. Spoon lobster salad in each hotdog bun.
