The Holy Grail
King Arthur Juice:
2 oz dried hibiscus petals
1 quarts sugar
6 oz organic, local honey
3 cinnamon sticks
1 tablespoon whole cloves
2 quarts water
Boil all ingredients to a boil for 10 minutes. Simmer for 10 minutes. Reduce 15%. Chill in refrigerator over night. Strain.
1 bottle favorite lager beer (we use a kiwi-lemon lager, our restaurant’s signature brew).
1 bottle brut champagne or sparkling wine.
Choose a chalice or royal goblet, the bigger, the better!
Build over ice in your glass of choice: equal parts of King Arthur Juice, lager beer and champagne.
Stir and serve.
Keep your remainder King Arthur Juice chilled for future royal gatherings.
Rosemary infused simple syrup:
1 cup water
1 cup sugar
¼ cup fresh rosemary leaves
Bring to a boil in a small sauce pan, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat, let cool, then remove leaves.
1 ½ oz. vodka, choose your favorite
¾ oz. cranberry juice
¾ oz. rosemary infused simple syrup
½ oz. fresh squeezed lime juice
2 dashes orange flower water
Shake, strain over fresh ice top with splash of tonic.
Garnish with whole frozen cranberries and a sprig of rosemary.
Yields: 1 cocktail
