Perinir De Puerco or Fresh Leg of Pork | JR's Old Packinghouse Cafe
- Leg of Pork
- 6-8 cloves garlic
- 4 oz salt
- 2 oz pepper
- 2 oz cumin
- 2 oz granulated garlic
- 2 oz granulated onion
- 2 oz oregano
In a grated oven dish suitable for the size of pork cooking, pork skin side down, make slots in meat and place 6-8 cloves of garlic. Seasoning, traditional Cubans use Bahai Complete Seasoning (make sure to use MSG-free), or season heavily with 4 oz salt, 2 oz pepper, 2 oz cumin, 2 oz granulated garlic, 2 oz granulated onion, and 2 oz oregano to create a rub. With the equivalent of 2 fingers of water in bottom of pan, cover, cook for 3 hrs (depending on size) at 350, until fork-tender. Turn over, make sugar water (4 oz water & 2 oz sugar), brush on skin, and continue to cook until golden brown, about 30 min, or until as desired.
2 oz chopped garlic
6 oz olive oil
pinch of salt & pepper
1 large yellow onion (or 2 med), sliced
6 oz of sour orange juice - Fresh is best but also sold in the Latin Food Section
In a med sized saucepan over med-low heat, add olive oil, chopped garlic, onion, juice, salt & pepper, and let simmer until sweet & tender.
2-3 raw peeled chopped fresh yuca or 1 bag of frozen yuca, your choice
Bring yuca to as boil in water, cook till fork-tender, drain. Add butter and salt (similar to a potato. Let sit.
Served with the Mojito Sauce.
Morro (White rice w/Black Beans) or The Moors & The Christians
2 oz garlic chopped
2 oz oregano
2 bay leaves
4 oz chopped bacon (raw)
1 lg yellow onion, chopped
1 lg green pepper
1/2 bunch cilantro chopped
2 oz cumin
4 oz olive oil
In a med-lg sized sauce pan, cook bacon until crispy, then add all ingredients above and cook till tender.
8 oz dried black beans, washed, rinsed, and checked
4 oz raw Uncle Ben's Par-Boiled Rice
In a large saucepan, add beans and cook until tender (45 min), on med-high heat. Add 1 pitcher (32 oz) water, then add 4 oz rice, then add Soforito. Let simmer until done (45 min). Add water as needed. Add 4 oz raw Uncle Ben's Par-Boiled Rice and let simmer.
